Another recipe from the kitchen of Debi Fasig.  Debi brings some of the most delectable treats into work.  This one, like the others, was simply scrumptious.  Thanks Debi and keep’em coming.

Apple Slices recipe from the Bartholomew Buffet -

2 cups flour
1/2 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 cup butter
2 beaten egg yolks
4 cups slices apples
3/4 cup sugar
1/4 cup flour
1 tsp. cinnamon
1 slightly beaten egg white

Combine 2 cups flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until crumbs are the size of small peas. Stir in egg yolks.  Divide mixture in half.  Press half over bottom of 10×15” pan.  Combine apples, remaining sugar, flour, and cinnamon.  Arrange over bottom crust.  Crumble remaining dough over apples.  Brush egg white over all.  Bake 40 minutes at 350 degrees.  Frost with powdered sugar glaze.

  1. Seems like apple pie, but bigger. I’m sure it’s delish.

    I try to cook things a little bit closer to the source – so to speak – which means there are less additions – which makes ’em a bit healthier.

    I take apple slices and saute them in a pan with a little butter, brown sugar, cinnamon and nutmeg. The amount of sugar you need depends on the type of apple you use. Granny Smiths take a little more sugar while Gala or Braeburn apples require a little less, for example.

    Anyway, you cook it with the lid on the pan until the apples are soft – but a bit al dente. Stir things around a bit so everything is well-combined. You don’t want the apples to be mush. The butter, sugar and spices sort of combine into a light syrup.

    You can serve the apples on top of vanilla ice cream, waffles or pancakes – or yummy with the flavors of fall just in a little ramekin or dish by themselves.
