Apricot Crescents

Sounds strange but good.

1 C. butter (no substitutes)
2 C. flour
1 egg yolk
1/2 C. sour cream
1/2 C. apricot preserves
1/2 C. flaked coconut
1/4 C. pecans, finely chopped

Cut butter into flour, coarse crumbs. Beat egg yolk and sour cream; add to crumb mixture and mix well. Chill several hours. Divide dough into fourths. On a sugared surface, roll each into 10″ circle. Turn dough over to sugar top. Combine preserves, coconut and pecans. Spread over circle. Cut each circle into 12 wedges and roll each wedge into a crescent shape, starting at wide end. Sprinkle with sugar. Place points down 1″ apart on ungreased sheet. Bake at 350° for 15 to 17 minutes, until lightly brown. Immediately remove to wire racks to cool.

Slush Punch

The official Riordan wedding punch. Don’t use substitutes for 7-Up!

7 C. water
2 C. sugar
1 large can frozen lemonade
1 large can frozen orange juice
2 C. strong hot tea (1 family-size bag per 2 C.)
1 pkg. strawberry jello, dissolved in hot tea water

Make in an ice cream pail. Put jello and tea in first and stir until jello dissolves. Add water. Mix and freeze. Before serving, add one 1-liter bottle of 7-Up. Thaw about 1 hour before needed.

Puppy Chow, Muddy Buddies

1 stick butter
1 C. peanut butter
1 C. chocolate chips
8 C. (1 box) Crispix cereal
3 C. powdered sugar

Melt the first 3 ingredients together. Pour over cereal; mix well. Add 1 cup powdered sugar and mix. Put in large grocery bag. Add 2 more cups powdered sugar. Shake bag until coated well.

Breakfast Pizza

Breakfast Pizza

1 lb. sausage, browned
1 pkg. crescent rolls
1 1/2 C. frozen, loose hash browns
1 C. Cheddar cheese
1 C. Swiss cheese, shredded
5 eggs
1/4 C. milk
2 T. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper

Divide rolls into triangles. Place on pizza pan. Press edges together. Push up along sides of pan. Sprinkle meat, hash browns and cheese. Beat together eggs, milk, salt and pepper. Pour over pizza. Sprinkle with Parmesan cheese. Bake at 350º for 25 minutes.

NOTE: Can use mozzarella cheese in place of Swiss cheese.

Lowfat Chicken Primavera

3/4 lb. chicken breast, cut into chips
1 small onion, chopped
1 T. oil
1 C. broccoli, thawed
1 C. green beans
1 carrot, in julienne strips
1 – 13 3/4 oz. can chicken broth
1/2 tsp. basil leaves
1 1/2 C. Minute instant brown rice
1/4 C. Parmesan cheese, optional
Pepper

Cook and stir chicken and onion until browned. Add broccoli, peas, carrots, broth, basil and pepper. Bring to boil. Stir in rice. Return to boil. Reduce heat. Cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in 1/4 cup Parmesan cheese, optional.

Dill Weed Dip

Part of Tom’s birthday celebration.

1 C. sour cream
1 C. mayonnaise
3 T. dill weed
3 T. minced onion
1 T. seasoned salt

Bread Pot Fondue

1 firm round loaf of bread
2 C. (8 oz.) sharp Cheddar cheese, shredded
6 oz. cream cheese
1 1/2 C. sour cream
1 C. cooked ham, diced
1/2 C. green onions, chopped
4 oz. chopped chilies, drained
1 tsp. Worcestershire sauce

MELT TOGETHER TO TOAST BREAD:
2 T. oil
1 T. butter

Hollow out loaf and save lid.
Cut inside of bread into cubes as you take it out.
Fill shell with dip.
Replace top.
Wrap loaf tightly in several layers of foil.

Bake at 350° for 1 hour and 10 minutes.

Coat bread cubes in oil and butter and toast at 350° for 10 to 15 minutes.
