<p>75 <a title="Club Crackers" href="http://www2.kelloggs.com/Product/ProductDetail.aspx?product=1227" target="_self">Club crackers</a><br />
1 C. butter<br />
2 C. graham cracker crumbs<br />
1 C. firmly packed brown sugar<br />
1/2 C. whole milk<br />
1/3 C. white sugar<br />
2/3 C. creamy peanut butter<br />
1/2 C. semi-sweet chocolate chips<br />
1/2 C. butterscotch chips</p>
<p>Line an ungreased 13 x 9-inch baking pan with 1 layer of crackers, cutting to fit. In a large saucepan, melt butter over medium heat.  Add cracker crumbs, brown sugar, milk and sugar.  Bring to a boil and boil for 5 minutes, stirring constantly.  Remove from heat and pour half of the butter mixture over crackers.  Place another layer of crackers evenly over butter mixture.  Pour remaining butter mixture evenly over crackers.  Top with remaining crackers.</p>
<p>In a small saucepan, combine peanut butter, chocolate and butterscotch chips. Melt over medium low heat, stirring constantly.  Spread evenly over crackers.</p>
<p>Cover and chill for at least 1 hour.  Cut into bars and store in refrigerator.</p>

<p>1 C. creamy peanut butter<br />
2/3 C. butter, softened<br />
1 1/2 C. sugar<br />
1 1/2 C. brown sugar<br />
4 eggs<br />
4 tsp. vanilla<br />
2 C. flour<br />
2 tsp. baking powder<br />
12 oz. chocolate chips<br />
1/2 tsp. salt</p>
<p>Preheat oven to 325 degrees  and grease 9 x 13&#8243; pan.  Cream peanut butter, butter, and sugars until smooth.  Add eggs and vanilla.  Mix til smooth.   Add flour, baking powder, salt. Spoon into greased pan.  Sprinkle with chocolate chips. Bake 5 minutes.  Using a butter knife, swirl melted chips through the dough.  Bake 40 more minutes until knife inserted in center comes out clean (some chocolate may stick to the knife).  Cool one hour.  Cut.</p>

<p>I was fortunate to receive a modern baking miracle called the &#8220;<a href="http://www.bakersedge.com/" title="Baker's Edge website" target="_blank">Baker&#8217;s Edge</a>&#8221; baking pan for Christmas.  The designer of this pan is an absolute genius, I wish I had thought of this first.  See the pictures below and purchase one of these bad boys for yourself.  It surely won&#8217;t disappoint.</p>

2 eggs, beaten<br />

<p>FROSTING<br />
1/2 C. butter<br />
1/4 C. cocoa powder<br />
1/3 C. reduced-fat buttermilk<br />
1 lb. box of confectioners&#8217; sugar  (powdered sugar)<br />
1 tsp. vanilla extract</p>
<p>Preheat oven to 400º</p>
<p>PREPARE BROWNIES:<br />
Combine sugar, flour and cocoa; mix well.</p>
<p>Combine 1 cup water with oil and butter in a medium saucepan.  Bring to boil; add to flour mixture and mix well.  Add buttermilk, baking soda, eggs, and vanilla.  Beat well by hand and pour into a greased 15 x 10 baking pan.  Bake 20 &#8211; 25 minutes or until a wooden pick inserted in the center comes out almost clean.  Cool completely on wire racks.</p>
<p>PREPARE FROSTING:<br />
Combine butter, cocoa and buttermilk in a saucepan; bring to a boil.  Remove from heat.  Gradually beat in powdered sugar and vanilla with a mixer on low speed.  Spread evenly over cooled brownies.</p>
<p>Serves 48</p>

140 calories, 7g fat, 1g protein, 20 g carbohydrates, 0g fiber and 60 mg sodium.</p>

Mix until frothy &#8211; at least 4 or 5 minutes (stand mixer works best)</p>
<p>Add and mix well:<br />
3/4 C. melted margarine</p>
<p>Sift together and add:<br />
2 1/4 C. flour<br />
2 1/2 tsp. baking powder<br />
1 tsp. salt</p>
<p>Add:<br />
1 T. <a href="http://www.realvanilla.com/" title="Watkins Real Vanilla website" target="_blank">Watkins real vanilla</a> (no substitutes)</p>
<p>Stir in by hand:<br />
1 cup semi-sweet chocolate chips<br />

2 C. confectioners&#8217; sugar<br />
1/2 C. butter, softened<br />
2 T. creme de menthe liqueur<br />
6 T. butter<br />
1 C. semisweet chocolate chips</p>

<li> Preheat oven to 350 degrees F.  Grease a 9&#215;13 inch baking dish.</li>
<li> In a large bowl, cream together 1 cup sugar and 1/2  cup of softened butter until smooth. Beat in eggs one at a time, then  stir in the chocolate syrup. Stir in the flour until just blended.  Spread the batter evenly into the prepared pan.</li>
<li> Bake for 25 to 30 minutes in the preheated oven, or  until top springs back when lightly touched. Cool completely in the pan.</li>
<li> In a small bowl, beat the confectioners&#8217; sugar, 1/2  cup butter or margarine and creme de menthe until smooth. Spread evenly  over the cooled brownies, then chill until set.</li>
<li> In a small bowl over simmering water, or in the  microwave, melt the remaining 6 tablespoons of butter and the chocolate  chips, stirring occasionally until smooth. Allow to cool slightly, then  spread over the top of the mint layer. Cover, and chill for at least 1  hour before cutting into squares.</li>

<p><strong>Oatmeal Mixture</strong><br />
1 C. shortening<br />
2 C. brown sugar<br />
2 eggs<br />
2 tsp. vanilla<br />
2 l/2 C. flour<br />
1 tsp. soda<br />
1 tsp. salt<br />
3 C. quick oatmeal</p>
<p>Cream butter and sugar until light and fluffy. Mix in eggs and vanilla. Sift together flour, soda, and salt. Stir in oatmeal. Add dry ingredients to creamed mixture. Set aside.</p>
<p><strong>Chocolate Filling </strong><br />
15 oz. can sweetened condensed milk<br />
12 oz. package chocolate chips<br />
2 T. butter<br />
1 cup nuts<br />
1/2 tsp. salt<br />
2 tsp. vanilla</p>
<p>To make filling, mix chips, condensed milk, butter, and salt; melt over low heat. When smooth, add nuts and vanilla.</p>
<p>Spread 2/3 of oatmeal mixture in a 10 x 15 (or half-sheet, 13 x 18) pan. Cover with chocolate filling. Dot with remaining 1/3 of oatmeal mixture.</p>
<p>Bake at 350 degrees for 20-25 minutes.</p>

<p>FILLING: In a medium saucepan, combine cranberries and dates. Cook, covered, over low heat for 10 to 15 minutes, or until cranberries pop, stirring frequently. Stir in vanilla. Set aside.</p>
<p>CRUST: Stir together flour, oats, brown sugar, baking soda and salt. Stir in margarine or butter until well blended. Pat half of the oat mixture on the bottom of a 9&#215;13&#8243; baking pan. Bake in 350º oven for 8 minutes. Carefully spread filling over baked oat mixture.<br />
Sprinkle remaining oat mixture atop. Pat gently. Bake for 20 to 22 minutes more or until golden. Cool on a wire rack. Drizzle with glaze. Cut into bars. Makes 32 bars.</p>
<p>ORANGE GLAZE: Stir together powdered sugar, vanilla and orange juice. More juice may be added to make the glaze a drizzling consistency.</p>

1 3/4 C. flour<br />
4 eggs<br />
2 sticks margarine, melted and cooled<br />
1/2 C. cocoa<br />
1 tsp. vanilla<br />
1/2 tsp. salt<br />
1/2 C. nutmeats, optional</p>
<p>To cooled, melted margarine, add sugar. Stir. Add cocoa. Stir. Add eggs. Stir. Add flour and then rest of ingredients. Bake at 350º for 20 minutes. Frost as desired.</p>

<p>Combine oatmeal, flour, brown sugar, baking soda and butter. Press 3/4 of the mixture into a 9&#215;13&#8243; pan. Bake at 350º for 10 minutes. Mix rest of ingredients and cook over medium heat until thick. Stir mixture constantly so it does not burn. Pour this over bottom crust and top with remaining crumb mixture. Bake at 350º for 20 minutes.</p>
