Goulash

Liza found this recipe online and it’s a flavor packed dish. I love garlic bread with tomato based meals and that combo hit the spot. Enjoy!

Ingredients:

  • 1/2 T. olive oil
  • 1/2 C. onion, diced
  • 1/2 green bell pepper, diced
  • 1 Ib. ground beef, lean
  • 1 1/2 tsp. garlic, minced
  • 1 15 oz. can tomato sauce
  • 1 15 oz. can petite diced tomatoes
  • 1 1/2 C. beef broth
  • 1 1/2 T. worcestershire sauce
  • 1 tsp. seasoned salt
  • 1 T. Italian seasoning
  • 1 1/2 bay leaves
  • 1 C. macaroni noodles, uncooked
  • 1/2 C. cheddar cheese, shredded

Instructions:
Add olive oil to large pot over medium-high heat. Add in the onion, bell pepper and ground beef then cook until beef is no longer pink. Drain any excess fat and return pot to stove top. Add in garlic and stir until fragrant (about 30 seconds).

Pour in the tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, seasoned salt, Italian seasoning, bay leaves and dried macaroni noodles.

Stir and bring mixture to a boil. Reduce heat to a light boil and stir occasionally until the pasta is tender, about 20 minutes.

Remove the bay leaves and stir in the cheddar cheese just before serving.

Beef Street Tacos

This is a great recipe for your outdoor griddle. Found this online and it has become a regular in our meal rotation. The recipe calls for Chuck Roast, however I wasn’t happy with the results (too chewy), but I found freshly sliced “Sizzle Steak” at our Walmart had the consistency we were looking for in the steak.

Ingredients:

  • 1 1/2 lbs Chuck Roast, cut into small pieces
  • 1 Small Diced Onion
  • Corn tortillas
  • Shredded Cheese (Oaxaca, Monterey Jack, or mozzarella)
  • Olive oil
  • Fresh Cilantro, Chopped
  • 1 T. Olive Oil
  • 1 T. Onion Powder
  • 1 T. Garlic Powder
  • 1 1/2 tsp. Ground cumin
  • 1 tsp. Ancho Chili Powder
  • 1 tsp. Coarse Salt
  • 1 1/2 tsp. Coarse Black Pepper
  • 3-4 Limes

Optional for serving:

  • Guacamole
  • Habanero Hot sauce

Instructions:

  1. Chop onion and set aside for serving
  2. Chop cilantro and set aside for serving
  3. Slice limes into wedges and set aside for serving
  4. Chop steak into small pieces, add Olive oil and combine with all the seasonings. Mix with your hand until the meat is consistently covered with seasonings
  5. Place seasoned meat onto a preheated griddle (high heat) until browned on all sides. I like it when the edges get a little burnt.
  6. Slide meat to the side of griddle on low heat
  7. Place corn tortillas on griddle, sprinkle cheese with cheese, and scoop meat onto cheese.
  8. When the corn tortillas show a little browning, top with cilantro and onion previously chopped.
  9. Squeeze a freshly cut lime over the meat
  10. Top with any other favorite toppings.

Scott’s Favorite Chili

Got the original recipe from All Recipes, the portions below are half the original recipe. It’s a hearty, fairly thick consistency chili. Our family loves this recipe topped with cheese, along with large Frito Scoops Corn Chips as mini spoons.

  • 1 lb ground beef
  • 1/4 onion, chopped
  • 1/2 tsp. ground black pepper
  • 1/4 tsp. garlic salt
  • 1 (15 oz) can tomato sauce
  • 1 can Rotel
  • 1 (8 oz) jar Pace picante sauce, mild or med
  • 2 tablespoons chili seasoning mix (try Williams original, 1/2 pkg.)
  • 1 (15 ounce) can pinto beans

In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.

Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

Italian Sausage Wontons

This delicious appetizer (which more often than not turns into full-on dinner) has been a staple at our New Year’s Eve Olympics celebration for a few years. It fits all the requirements of our NYE menu: cheesy, tasty, and easy to make.

1 lb Italian sausage (cooked, drained)
1 large jar pimentos
3-4 C. shredded Mexican cheese
1 C. ranch salad dressing
3-4 boxes of wonton cups (mini fillo shells by Athens)

Mix ingredients together in a bowl.  Fill wonton cups/mini fillo shells and place on a baking sheet or stone.  Bake 10 minutes at 350 degrees.

Tortellini Soup

Another dish from the kitchen of Margi Newkirk.  This was fantastic, she didn’t think it was BBUFFET worthy, but my taste buds would beg to differ.  Here are her comments about this recipe:  “This is one those recipes where you just sort of use what is in the fridge and forget the rest and it still always turns out!!  Enjoy!!”

1 lb. hamburger (or Italian turkey sausage)
1 large package of refrigerated tortellini
1 C. red wine
1 onion
2 stalks of celery with leaves
1 red or yellow bell pepper
5-6 carrots
2 garlic cloves
4-5 cans of low sodium beef broth (or chicken broth or a combination)
1 can of tomato puree (28 oz.)
1-2 T. sugar
Dried herbs (basil, oregano, thyme, marjoram, some black pepper)

  1. Brown 1 lb of Italian sausage until it is no longer pink – drain well on paper towels (I used hot Italian turkey sausage but I have also used pork sausage).
  2. In a large soup pot, saute chopped onion, celery, red or yellow bell peppers, finely chopped carrots and some minced garlic in a little olive oil.
  3. Add the cooked sausage to the pot. Pour in about a cup of red wine and stir till it is nearly evaporated.
  4. Add 4-5 cans of low sodium beef broth (or chicken broth or a combination), one 28 oz can of tomato puree (I had a bunch of fresh tomatoes so I just blended those up instead but the canned is great, too), and some dried herbs – basil, oregano, thyme, marjoram, some black pepper, and 1-2 tbsp sugar.
  5. Let simmer 30-40 minutes until the carrots are tender.
  6. Bring to a boil and add a large package of refrigerated tortellini.
  7. Reduce heat and simmer until tortellini is cooked (5-6 minutes).

Sometimes you need to add more broth or water on the second day as the tortellini seems to continue to soak up the liquid.

Easy Crock Pot French Dip Sandwiches

I am always looking for ways to use up a roast without having to eat … roast. This is a fabulous recipe I got from my friend Erin. She is pretty much the queen of making easy food that tastes like it took all day to prepare. (Well, technically this does take all day.) Most importantly, it’s impossible to mess this up. Enjoy!

3-4 lb. beef roast
2 onions (sliced)
5 C. water
1/2 C. soy sauce
1 envelope Lipton Onion Soup Mix
1 clove garlic, minced
Rolls or hoagies
Thinly sliced Swiss cheese

Place roast in large crock pot. Add other ingredients. Cook on low for 6-9 hours (depending on how hot your crock pot is). Shred beef and place on buns; top with cheese and broil 3-4 minutes or until cheese is melted. Serve with juices for dipping.

Good Beef Burgers

Went down to Iowa to visit my father in-law with the family and he made this for lunch.  It was so simple to make and yet so tasty.  Certainly something we’ll be trying again at home.  Thanks Rog!

1 1/2 lb. browned ground beef
1/2 medium onion, chopped
1 can – chicken gumbo soup
1 1/2 T. mustard
1 T. ketchup

Simmer for 30 minutes and serve.

Stuffed Shells

This recipe comes from my sister in-law Becky Lenz.  She made this dish for dinner one night over Christmas.  It was a great dish, full of flavor.  The picture doesn’t do it justice, so don’t judge the recipe by the photo, just make and you’ll agree!

1 box jumbo shells
1 lb. ground beef
1/2 lb. Italian sausage
1 small onion – chopped
1 medium pkg. shredded mozzarella cheese
1 small pkg. shredded Italian 5 blend cheese
2 lg. can Hunts 4 cheese spaghetti sauce
2-3 tsp. Grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. pepper
4-5 tsp. oregano
3-4 shakes of parsley flakes

  1. Cook noodles according to package.  Drain with cold water and let cool.
  2. Brown meat and onion
  3. Add salt, pepper and oregano
  4. Cook until the meat is browned and the onion is clear
  5. Drain grease off meat mixture
  6. Add 2 cups sauce and 1 cup of each type of cheese to meat mixture and mix together until cheese is partially melted
  7. Cover bottom of 9 x 13 baking dish with sauce
  8. Stuff shells with mixture and place in baking dish
  9. Cover with remaining shredded cheese
  10. Cover with remaining spaghetti sauce
  11. Sprinkle with Parmesan cheese and parsley flakes
  12. Cover with foil and bake at 350 degrees for 1 hour.
  13. Remove foil and bake for additional 5-10 minutes

NOTE — Make sure that noodles remain covered with sauce while baking

Shaun’s Rigatoni

We got this recipe from our neighbors (the Langs) after the birth of our third kiddo.  They brought over a big casserole dish and it had excellent flavor.  Absolutely something we would make again, or accept from our neighbors if they are so inclined to deliver over another pan. Hint, hint!

1 lb. ground beef
1/2 C. chopped onion
1/4 C. chopped green pepper
1 pkg. Italian style spaghetti sauce mix (Shilling Brand)
1 – 16 oz. can whole tomatoes
1 – 6 oz. can tomato paste
3/4 C. water
Velveeta Cheese
3/4 box Rigatoni Noodles

  1. Fry hamburger, onion and green peppers together.
  2. Boil noodles.
  3. Combine hamburger with paste, tomatoes, sauce mix and water.
  4. Stir into noodles.
  5. Layer with Velveeta in casserole pan.
  6. Bake at 350º for approximately 35 minutes covered.
