Asparagus Spears

Asparagus spears
Butter or olive oil
Garlic
Salt and pepper to taste

Clean spears and cut off tough ends. Line broiler pan with foil, melt butter (enough to coat asparagus) in saucepan; add some minced garlic to taste. Place spears in single layer on foil and pour butter over them. Place under broiler. Cook until tender and brownish. You need to keep turning them or they will burn. They will be on the crispier side. You can pick them up like a dill pickle to eat.

Salsa Soup

This easy soup is absolutely delicious by itself or served with tortilla chips, cheese and sour cream. Either way we eat it at least twice a month in the winter. I got it from Ellen, but since I make it more often, I got to put my name on it. Try it – you’ll see!

Salsa Soup

1 lb. chicken breast
1 3/4 C. water
1 can Campbell’s chicken broth
1 1/2 tsp. chili powder
1 can Mexi-corn
1 C. thick and chunky salsa
2 C. tortilla chips, broken
Cheese, shredded

In 2-quart saucepan I simmer water and chicken until chicken is cooked through. Remove chicken breasts; cut into bite-sized pieces and return to water. Add chicken broth and chili powder. Bring to boil; simmer, covered for 10 minutes. Add drained corn and salsa. Simmer, uncovered, for 5 minutes. Serve with chips and cheese on top. Excellent with corn bread.

Caramel Layer Chocolate Squares

Caramel Layer Chocolate Squares

1 – 14 oz. pkg. caramels
1/3 C. evaporated milk
1 box German chocolate cake mix
3/4 C. butter or margarine, melted
1/3 C. evaporated milk
1 C. chocolate chips
1 C. nuts, chopped, optional

Grease 9×13″ cake pan. In a small saucepan, combine caramels and 1/3 cup evaporated milk. Melt over low heat, stirring occasionally. In a large bowl, combine cake mix, butter, 1/3 cup evaporated milk, and nuts. Stir by hand until well mixed. Press half of dough into pan. Bake at 350º for 6 minutes, just until edges start to be firm. Sprinkle chocolate chips over warm crust. Spread caramel mixture over chocolate chips. Crumble rest of the dough on top. Bake for 15 to 18 minutes longer. Set in refrigerator for 30 minutes to set caramel.

Shredded Turkey Sandwiches

If you’ve ever been to the Minnesota State Fair and devoured a “Turkey To Go” sandwich you’ll truly appreciate this shredded turkey recipe. This is the closest recipe I’ve found to the real thing. Thanks to my co-worker Steve Milbrandt for sharing this at a work potluck and to his wife Sharon for writing this recipe down. This recipe keeps really well in the refrigerator for a quick sandwich in the microwave. You could even use this for Thanksgiving leftovers.

Shredded Turkey Sandwiches

Ingredients:

1-Whole turkey thawed
Lawrys Seasoned Salt
Pepper
Garlic Salt

If needed:

Chicken bouillon or chicken broth
Cornstarch

  1. Cook the turkey as you would traditionally cook a whole turkey.
    (I like to get a turkey that has a pop-up button, and I use a turkey bag)
  2. When the turkey is done, remove from the bag and let it cool. SAVE THE JUICES!!
  3. Pull turkey apart. Using your hands grab a chuck of turkey and pull pieces off. Put the meat in a crock pot. Pour all the juices over the meat. (The juices should cover half of the meat. If you do not have enough, use chicken bouillon or chicken broth).
  4. Take Lawrys Seasoned Salt and sprinkle over the entire top of the shredded meat, a little more than medium but not real heavy. Do the same with pepper. Then sprinkle about half as much garlic salt as you did with the Lawrys Seasoned Salt. (In other words: 2-parts Lawrys Seasoned Salt, 2-parts pepper, and 1-part garlic salt.)
  5. On low heat, cook the turkey for 5 to 6 hours. Turn off the crock pot and let it cool before putting in the refrigerator.
  6. Next day, season the turkey again following same amounts as before. Cook the turkey on low heat in a crock pot for about 3 to 4 hours.
  7. About 1-2 hours before you want to serve it, add more seasonings (if needed).
    • NOTE: You don’t want the liquid to be runny, but you also don’t want it pasty. If it’s too thick, add some water. If it is to runny, add some more cornstarch mixture as follows: In a bowl, put in about 2-3 tablespoons of cornstarch and add just enough water to get the consistency of paint. Stir into turkey and check the consistency of the meat.

Serve on sliced sandwich buns

Mustard Dip

Mustard Dip recipe from the Bartholomew Buffet - bbuffet.com

1 C. Miracle Whip
5 T. Boetzens mustard
1/2 C. sugar
1 tsp. garlic powder

Mix all together and serve as dip for pretzels.

Chunky Cheese Dip

Sounds terrible but is really good – trust me, I am your AUNT!

Chunky Cheese Dip from the Bartholomew Buffet

2 C. Cheddar cheese, shredded
2 C. pecans, chopped
5 to 6 tsp. mayonnaise, or more if you like (I use 7 to 8 tsp.)
6 green onions, chopped

Mix above ingredients into bowl. Pat into a 9″ pie plate (looks very nice in a Longaberger pie plate). Refrigerate 4 to 5 hours. Convert onto a plate. Spread 1/2 jar of raspberry hot pepper preserves (Rothchild) on top. Serve with Ritz crackers.

SUGGESTION: Use the other 1/2 jar of raspberry hot pepper preserves to spread on a layer of cream cheese and serve with crackers.
